We spent some time this afternoon with Vic Peos, at Peos Estate Winery (https://peosestate.com.au), tasting his shiraz and something unexpected—shiruz grape soda, bright and nostalgic, the kind of sweetness that pulls you back to childhood. The conversation moved easily through the things that make the Southern Forests great: the way farmers share knowledge, even with former urbanites like me; the quiet pride in the farming profession; the understanding that survival here means collaboration, not competition.
Before leaving, Vic walked us into a small cabin with its sloped wooden beams, cooking grill at the centre, and open door, where the garden becomes part of the room. This one-room cabin was built for lingering. For talking. For letting ideas steep between sips of wine.
This is what the region does best: it gives you space to think, to connect, to remember why you chose life out here in the first place. The Southern Forests—no place like it on Earth.
